Creole Style Tomato Salad

This 5-ingredient low-carb tasty tomato salad featuring Creole tomatoes will turn heads at your next date night or girls night in.

Who doesn’t love a creole tomato?

As a little girl, I can vividly remember visiting my Maw Maw and Paw Paw. While drinking coffee milk (yes I did) my Maw Maw would walk outside to her garden, pull a tomato off the vine, slice, salt, and pass to me to eat. It was delicious and refreshing.

Many restaurants in the New Orleans (and surrounding areas) keep the creole tomato memory alive by featuring the creole tomato in their salads and soups. Having tried several varieties, I love the spin of a salad with creole tomatoes and goat cheese. Many of us are familiar with a ‘Caprese’ salad (which I also love), but I love to pay homage to the New Orleans version.

I must admit, when I told my husband about this salad, he was, well, perplexed. We prepared this salad together and guess what, it was all gone!

Do note, creole tomatoes are not sold year round, so I did substitute with Roma. But when those creole tomatoes are in the store, you better believe I will buy!

Creole Style Tomato Salad

Creole Style Tomato Salad

4 Roma tomatoes (or 2 creole tomatoes), sliced
4 ounces of goat cheese, crumbled
1 tablespoon of olive oil
1/4 cup of fresh basil chopped
Cracked pepper

Directions:

  1. Lay sliced tomatoes on a plate or tray.
  2. Sprinkle goat cheese on tomatoes.
  3. Layer with a drizzle of olive oil, basil, and cracked pepper.
  4. Serve!
