Skinny Shrimp Tacos

Welcome to Lent!

For some of us Lent is the start of a ‘New Year’s Resolution’ where we ‘give up’ candy, cookies, sweets, Facebook, and soda. To others we look to add something to our life – drink more water, a crossword a day, or read a book a week.

As a dietitian and Catholic, I’d like to encourage you all to think on the positive side and not the ‘dreaded side’ of Lent. In looking at the positive, introduce all the wonderful foods we can include in our diet during Lent, specifically seafood.

When adding seafood, don’t fear, embrace. Embrace the simplicity of preparation and the incredible taste our amazing seafood brings to us.

I have an tasty and simple dish perfect for Ash Wednesday – Skinny Shrimp Tacos. By adding shrimp to simplicity of our ‘taco’ nights – this is a great meal for the entire family!

Taco nights are an amazing way to get the entire family involved in preparation. The kids to set the table and set up ‘dressings,’ while we run the stove.

Skinny Shrimp Tacos

Unfortunately, taco night can spell additional calories with the following:

  • Taco shell – fried and carb rich
  • Sour cream – extra fat and calories
  • Fried meats – the breading adds extra carbs and frying increases the fat and calories

We ‘skinny-ed’ this dish by using:

  • Grilled shrimp – this method of cooking is a low-fat method
  • Light sour cream – decrease fat and calories
  • High fiber soft wraps – fiber is AMAZING for heart health and yes, weight loss!

Skinny Shrimp Tacos

1 tablespoon olive oil
1/2 cup onion, peeled and chopped
10 oz – 16 oz shrimp, peeled and deveined (no tails)
1/4 cup lime juice
1 tsp chili powder
1 tsp Cajun seasoning
1 cup cilantro, chopped
1/2 red cabbage, shredded
1/2 green cabbage, shredded
Light sour cream (optional)

Instructions:

  1. Preheat pan to medium heat.
  2. Add olive oil. Add onion. Cook 2-3 minutes or until soft.
  3. Add shrimp. Cook 3-7 minutes or until shrimp are pink and no longer transparent in color.
  4. Set heat to low. Add lime juice, chili powder, and Cajun seasoning. Cook for 1-2 minutes.
  5. Remove from heat.
  6. Dress Mission Carb Balance wrap with shrimp, cabbage, and cilantro. Add sour cream.
  7. Enjoy!
