Skinny Slow Cooker Beef Enchiladas


This low-net carb version of beef enchiladas will be a hit with the entire family!

This recipe is amazingly easy and is great to put together for a weekend meal. Simply cook your beef after breakfast, combine all ingredients, and you will have an amazing supper when returning home from your errands.

Save calories and fat without sacrificing flavor by using lean ground beef, 98% fat-free cream of mushroom soup, and 2% cheese. The big secret though? We used our Mission Carb Balance Wraps to increase the fiber, making this a diabetic friendly dish!

Ingredients
  • 1 lb. lean (90/10) ground beef
  • 2 cans (10 oz.) enchilada sauce
  • 1 can Healthy Request 98% fat-free cream of mushroom soup
  • 1 pkg. Mission Carb Balance Wraps
  • 2 cups 2% shredded cheddar cheese

Preparation

Step 1: Place large skillet over medium heat. Spray with non-stick cooking spry. Add beef. Cook until no longer pink.

Step 2: Stir in enchilada sauce and soup. Mix. Cook for 2 minutes. Remove from heat.

Step 3: In slow cooker, layer 1/3 of beef mixture, tortillas and cheese.

Step 4: Repeat twice.

Step 5: Cover. Low 6 hours.
